I believe Julia Child said perfectly roasting a chicken is the test of any good cook. To help you pass that test I’ve published my recipe for 7 Minute Roast Chicken and by all accounts and feedback I get – it works! Now you can extend your mastery of that task and transfer the understanding to a dish many believe to be a bit elevated in presentation and elegance. Specifically Pan Roasted Game Hens.

Do you have a special date night dinner coming up? Surprise your significant other with an elegant meal and presentation of Pan Roasted Game Hens. Game Hens are simply younger and smaller chickens. That’s it. Not a special breed or such – they are chickens harvested a few weeks earlier than the 3+ pound birds sold as ‘fryers’ in grocery stores. You cook them pretty much the exact same way as the recipe for my 7 Minute Roast Chicken.

Simplicity of method, procedure and ingredients is how I best describe my style of cooking. I like to call it “Rustic.”  All that means is I don’t fuss with complex procedures and multiple steps to make something. I generally cook with methods that are transferable between the indoor and outdoor kitchens. Indoor broiling is kinda like outdoor grilling and indoor roasting is kinda like outdoor slow cooking barbecue. Indoors I use a kitchen stove with oven and range top while outside I use a grill or specialty cooker (like a smoker) and the addition of wood smoke to enhance the flavors.
